3   medium ripe yellow plantains
4   teaspoons coconut oil
Dash of coarse sea salt flakes

HOW TO MAKE IT

1 Preheat the oven to 350°F (175°C).
2 On a cutting board, cut the plantains in half lengthwise. Remove peel and cut into 1/2-inch (1-cm) slices.
3 In an ovenproof skillet over medium heat, lightly toss the plantains with coconut oil and a little sea salt. Cover the skillet with aluminum foil and transfer to oven.
4 Roast for 12 to 15 minutes, or until the plantains are golden brown all around.
